As forecasted, Sunday was covered in gentle all day rain. It was the last day of a 11 day break and the perfect way to end of a very relaxing time off. And when it comes to food pairing for a rainy day, Curry sits near the top of the leaderboard.
I was scandalised by the instructions on the back of the Singapore Curry pre mix sachet. It called for me to add the dry spices to a pot of boiling water instead of my usual practice of blending spices with wet ingredients like ginger, galangal, shallots and garlic and then frying them till fragrant and oil separates from the mixture to start the curry making process. But what the heck, let’s try it out. I proceeded to boil a pot of water with potatoes and carrots. As I wait for the water to boil, I cut open the pre mix sachet and sighed in blissful relief. The fragrance of childhood permeated my senses and I knew I was on the right track.

The curry turned out wonderful for me and I thought it would be mild enough for Chris. Unfortunately, it called for a glass of milk. Oops.
